Instructions:
Preheat your oven to 350F 175C
Grease and line a 9x13-inch baking pan with parchment paper
In a medium bowl, whisk together the flour, baking powder, and salt
In a large mixing bowl, combine the melted butter and brown sugar
Mix until well combined and slightly cooled
Add the eggs, one at a time, mixing well after each addition
Stir in the vanilla extract
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Fold in the chocolate chips and chopped nuts until evenly distributed in the batter
Pour the batter into the prepared baking pan, spreading it evenly
Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs
Be careful not to overbake; you want the bars to be gooey and soft
Once baked, remove from the oven and allow the Congo bars to cool completely in the pan on a wire rack
Once cooled, carefully lift the bars out of the pan using the parchment paper and place them on a cutting board
Cut into desired-sized bars or squares
Serve and enjoy these delicious vintage Congo bars
