A hearty and flavorful soup combining the rich spiciness of chorizo with the earthy taste of white beans and the freshness of spinach.
Ingredients:
- 1 lb chorizo sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cans white beans, drained and rinsed
- 4 cups fresh spinach, chopped
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chorizo slices and cook until browned
Remove excess oil if needed
Add diced onions and minced garlic
Saut until onions are translucent
Stir in smoked paprika and cumin, coating the ingredients evenly
Pour in chicken broth and bring to a simmer
Add white beans and simmer for 15 minutes, allowing flavors to meld
Stir in chopped spinach and cook until wilted
Season with salt and pepper to taste
Serve hot, garnished with fresh parsley
