Vanilla Cupcakes for Two

This simple recipe makes two vanilla cupcakes that are just the right size for a sweet treat with a friend. You can enjoy the classic vanilla flavor in a small batch.

Ingredients:

  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1 small egg

Instructions:

Preheat your oven to 350F 175C and line two cupcake tins with paper liners

In a small mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt

Add the softened butter to the dry ingredients and mix until it resembles coarse crumbs

In a separate bowl, whisk together the milk, vanilla extract, and egg

Pour the wet ingredients into the dry ingredients and stir until just combined

Divide the batter equally between the two cupcake liners

Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Remove from the oven and let the cupcakes cool in the tins for a few minutes before transferring them to a wire rack to cool completely

Once cooled, you can frost and decorate the cupcakes as desired
