Quinoa Avocado Salad

A refreshing and nutritious quinoa salad with the creamy goodness of avocado, vibrant cherry tomatoes, and crisp cucumber. The zesty lime dressing adds a burst of flavor to create a perfect balance in this delightful dish.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions:

Put the quinoa and water in a medium-sized saucepan

After it starts to boil, turn down the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed

Use a fork to fluff up the quinoa, then let it cool to room temperature

Cook the quinoa and put it in a large bowl

Add the avocado, cherry tomatoes, cucumber, red onion, and cilantro

Mix olive oil, lime juice, salt, and pepper in a small bowl with a whisk

Add the dressing to the quinoa mixture and mix it together gently

Serve right away or put in the fridge until youre ready to serve
